Vegetable Hummus Sandwich

Ingredients
1 Chicago Style Pita Fold (1029)
2 oz. Cucumber Planks
1 oz. Traditional Hummus (4340)
2 oz. Sliced Tomatoes
1 oz. Diced Carrots
2 oz. Shredded Cole Slaw
Directions
Preparation Instructions:
1. Thaw pita bread (thaw enough for day’s usage) in bags out of box at room temperature at least 3 hours prior to use. Do not refrigerate bread.
2. Slice tomatoes approximately 1/4 inch thick. Dice carrots into ¼” pieces.
3. Slice cucumber into 1”x 3” planks
Tip: Prepare only enough product for one day’s service
Assembly:
1. Lightly oil one side of the pita bread with vegetable or corn oil
2. Place on a heated (350-375) flat top grill cook pita bread on both sides for 20-30 seconds per side to a light brown color
Tip: Do not use any flavored oils on pita, this will change the taste of the pita. (Use liquid margarine product to add flavor to your pita bread)
3. Spread hummus evenly over pita bread
4. Place tomatoes, carrots, cucumber and Cole slaw, thoroughly mix vegetables.
5. Place vegetable mixture on warmed pita bread.
6. Place in a sandwich bag.
