
Ingredients
1 Skinny Bun™ (# 1153, #1155, #1157)
2 Tablespoons olive oil
2 Tablespoons diced tomatoes
2 Asparagus spears cut into 1 inch pieces
1 Large egg
1 Tablespoon Mediterranean Olive Hummus (#4331)
Directions
In a medium size pan add olive oil, tomatoes and asparagus. Cook and stir about one minute or until crisp tender. Remove from pan and keep warm. Add remaining olive oil. Remove top half of Skinny Bun and cut a hole about 1½ inches in diameter. Place into pan and crack the egg into the hole, cook until desired doneness. Spread Mediterranean Olive Hummus onto bottom half of bun and cover with cooked vegetables. Top with cooked egg and bun top.
