
Ingredients
1 Chicago Style Pita Fold (1029)
3 oz. Roasted Red Pepper Hummus (4310)
½ oz. Calamata Olives (403)
1 oz. Feta Cheese (078)
3 oz. Romaine Lettuce
1½ oz. Greek Dressing
1 oz. Pepperocini
Directions
Preparation Instructions:
1. Shred lettuce approximately ½ to ¾ inch thick.
2. Cut pita fold into 6 wedges. In a bowl place wedges and bath in olive oil. Shake on oregano, salt and pepper. Bake in a 350 preheated oven for 5 minutes.
3. Toss lettuce in a separate bowl with the Greek Dressing.
Tip: Prepare only enough product for one day’s service
Assembly:
1. Place lettuce/Dressing mixture into container.
2. Top lettuce with Kalamata Olives, feta cheese and pepperoncini.
3. Place scoop of Roasted Red Pepper hummus on top of salad.
4. Place pita wedges on the side of the salad.
