Stuffed Portobello Mushrooms

Ingredients

14-16 medium Portobello mushrooms, stems removed
2 cups fresh spinach chopped
1/2 cup Opaa! Brand™ Zesty Feta Spread 


Directions

Blanch spinach in pot of boiling water for 30 seconds or until wilted. Empty water and squeeze excess water from spinach until dry. Blend together wilted spinach and Zesty Feta Spread until incorporated. Spoon into mushroom caps and bake at 400˚F for about 12 minutes or until golden brown and bubbly.


Serves: 7-8
