Grilled Italian Vegetable Hummus Sandwich

Ingredients
1 Chicago Style Pita Fold (1029)
2 oz. Green Pepper Planks
1 oz. Traditional Hummus (4340)
1 oz. Sliced Tomatoes
1 oz. Roughly Chopped Onions
2 oz. Sliced Mushrooms
1 oz. Zestly Italian Dressing
Directions
Preparation Instructions:
1. Thaw pita bread (thaw enough for day’s usage) in bags out of box at room temperature at least 3 hours prior to use. Do not refrigerate bread.
2. Slice onions, mushrooms and tomatoes approximately 1/4 inch thick.
3. Slice green peppers into 1”x 3” planks
Tip: Prepare only enough product for one day’s service
Assembly:
1. Place onions, green peppers and mushrooms on heated flat top grill
2. Pour 1 ounce of Zesty Italian Dressing on sautéed vegetable mixture and mix thoroughly.
3. Lightly oil one side of the pita bread with vegetable or corn oil
4. Place on a heated (350-375) flat top grill cook pita bread on both sides for 20-30 seconds per side to a light brown color
Tip: Do not use any flavored oils on pita, this will change the taste of the pita. (Use liquid margarine product to add flavor to your pita bread)
5. Spread evenly over pita the hummus spread
6. Place vegetable mixture evenly on warm pita.
7. Top with tomato slices.
8. Place in sandwich bag.
