Ingredients:
- 7" GDF Pita Fold
- Skitas: 3 Skewers
- Shredded Lettuce: 1 oz.
- Thinly Sliced Onions: 1 oz.
- Grecian Delight Tzatziki Sauce: 1 oz.

Preparation Instructions:
1) Thaw pita bread (thaw enough for day's usage) in bags out of box at room temperature at least 3 hours prior to use. Do not refrigerate bread.

2) Place frozen Skitas into a 375° fryer for approximately 4 minutes or until golden brown.

3) Lightly oil one side of the pita bread with vegetable or corn oil.

4) Shred Iceberg lettuce approximately ½ to ¾ inch thick.

5) Place on a heated (350°-375°) flat top grill cook pita bread on both sides for 20-30 seconds per side to a light brown color.
Tip: Do not use any flavored oils on pita, this will change the taste of the pita. (Use liquid margarine product to add flavor to your pita bread)

6) Take pita bread from grill and place pita bread with bumpy side up on sandwich paper.
Tip: Never serve pita with the bumpy side on the outside of sandwich, the appearance of the gyros is not appealing to the customer.

7) Place thinly sliced onions on the Warm Pita Bread.
Tip: Onions should be sliced approximately 1/16" thick to allow onions to cook between hot bread and meat.

8) Take wood skewers from Skitas and place on the warm pita bread.
Tip: Place Slitas between folded pita bread to remove wood skewers.

9) Top sandwich with thinly sliced tomato halves and Fiesty Feta sauce.
Tip: Tomatoes should be cut into halves and sliced approximately 1/4" thick. Fiesty Feta sauce should be kept refrigerated and served cold.

10) Wrap sandwich and serve.
Tip: Sandwich should be served hot to the customer. If you make sandwiches ahead of time do not add Fiesty Feta sauce, tomatoes and onions to gyros sandwich until you are ready to serve the gyros to your customers. Keep sandwiches covered in a steamtable pan.
