Mid March has come and that means decisions, decisions, decisions. Now that all the madness of picking teams for your brackets is complete, lets get down to the important stuff … the food!

Lets mull over some tasty Grecian Delight options so you have something to munch on during the games.

Dips and chips are always good. This year try kicking up your traditional boring version by making Feta Lime Mango Salsa. Serve with toasted pita squares cut into triangles to really get the crowd going.

And if traditional nachos aren’t quite cutting it, try our Mediterranean Nachos made with gyro slices to kick up the flavor.

For armchair quarterbacks everywhere, the Super Bowl is not just a game. It’s THE game.
And it’s one of the few times that – when it comes to sensible eating – all bets are off. Whether you tune in for the game, the halftime show, or the commercials, you won’t miss one minute of the action if you keep things simple with make-ahead dishes and easy buffets.

But before we get to the food let’s get your place ready with these easy decorating ideas.

* Anchor your game day theme with a big football-shaped cake or dessert.

* Get plenty of mylar balloons to decorate around your house or around the buffet table.

* Stock plenty of football themed paper plates, napkins and cups.

* Want to impress your friends? Order life-sized cardboard cutouts of your favorite football players and hero’s and set them up for photo ops.

* As host you should wear black and white referee strips. Encourage your friends to dress in their team colors. And remember do not forget the whistle.

* Does your invitation include kids? Set them up with their own viewing room. Provide kid-friendly snacks and beverages, and a stack of games and movies. If there are a couple of responsible teenagers in the group, pay them to keep an eye on the younger ones.

Now onto the important stuff … THE FOOD.
You are going to need plenty of snacks on hand to fuel your guests until kickoff.
Here’s a list of some good Pre-Game Appetizer recipes, with a Mediterranean twist, that are sure to impress your guests:

For the main event – besides the football game that is – here are some mouth watering recipes sure to satisfy all. The best part about these recipes is that they can all be prepared in advance and quickly reheated for serving.

Most will be trying to shed those holiday pounds – or just pounds you gained from your year of fun. A great way to keep healthy would be to follow the Mediterranean Food Pyramid.

The pyramid tells you what to eat daily, weekly and monthly.

What to Eat Daily
Breads and whole grains need to be implemented into your daily meal. For us, that means our delicious flatbreads and pita breads.

Beans, Legumes and Vegetables are the next level on the pyramid. These things can come in the form of raw vegetables and fruits, or can include some of our tasty spreads like Hummus and Baba Ghanouj.

Olives, a Mediterranean staple food, are included in the levels of the pyramid that should be eaten daily, so indulge away!

What to Eat Weekly
Cheese and yogurt are suggested to be eaten weekly to maintain a healthy diet. Once a week, you could treat yourself to our tasty Zesty Feta Spread—perfect with your daily flatbread.

Chicken, Fish and eggs are also necessary to consume weekly. We have a delicious recipe for your weekly chicken dish. Click Here

We all need our sweet tooth fix, and the pyramid says we can indulge once a week. Our recommendation for your sweet splurge, Grecian Delight’s delicious Nut Rolls.

What to Eat Monthly
Sitting alone at the top of the Mediterranean pyramid are meats. This means that once a month, plan on incorporating some type of red meat into your meals. We suggest adding some of our precooked Gyro Slices —which contain lamb, beef and other special spices.

It's a time about celebrating certain family traditions like making a specific casserole or playing the annual family game of football. We love this time of year, and we have many traditions of
our own. We here at Grecian Delight want to help you create your own tradition
of tweaking the food a bit to make your holiday a Greek Thanksgiving. We have a
few Greek Thanksgiving Recipes for every part of the meal to add a little
Grecian twist.

Greek Thanksgiving Recipe: Appetizer

Even though people are about to have one the biggest meals of the year, appetizers for the meal are always expected and necessary. To infuse the idea of a Greek Thanksgiving, one appetizer you could try is serving a veggie plate with our Opaa! Brand Tzatziki Sauce.

Greek Thanksgiving Recipe: Side Dish

Mashed potatoes are a staple of a normal Thanksgiving dinner, but you can spice things up a bit this year and make a traditional Greek dish: Patates sto Fourno, or Oven Roasted Potatoes. Add this dish to your Greek Thanksgiving by cutting up potatoes and tossing them with olive oil, oregano, garlic, fresh squeezed lemon, salt and pepper, and 1/2 cup of chicken broth and then popping them in the oven for 1 hour.

Greek Thanksgiving Recipe: Dessert

As for dessert, a delicious Greek take on the traditional Pumpkin pie would be the Kolokythopita: A Greek Pumpkin Pie with Filo Dough. This dessert comes from Ileia, a province on the west coast of the Peloponnese peninsula of Greece.

Whatever you decide to do this Thanksgiving, we wish you good times, happiness and full stomachs. Happy Greek Thanksgiving from Grecian Delight!

We here at Grecian Delight are thrilled about celebrating this holiday! In honor of this day, we want to give you a little lesson on what Baklava is and some fun facts about it!

Baklava is a popular, rich and sweet pastry that is found in many cuisines of the Middle East and much of central and southwest Asia. It is made of layers of phyllo pastry dough with chopped nuts, usually sweetened with syrup or honey. It is found in most, if not all, Greek restaurants, and we are very proud to say that we have created delicious Baklava here at Grecian Delight .

A few fun facts about Baklava:

Oldest Baklava recipe was found in a Chinese cook book written in 1330

In 2008, the Turkish patent office registered a geographical indication certificate for Baklava for the city Gaziantep, the city that is known for its delicious Baklava

In Afghanistan, Baklava is prepared into triangle shaped pieces and covered in pistachio nuts

In Armenia, Baklava is made with cinnamon and cloves

Grecian Delight offers a delicious version of Baklava for order. However, if you want to attempt to make this on your own tonight to celebrate the holiday, here is an easy recipe for you to try:

Ingredients:

1 (16oz) package phyllo dough

1 pound walnuts

1 cup butter

1 tsp cinnamon

1 cup water

1 cup white sugar

1 tsp vanilla extract

1/2 cup honey

Directions: Preheat oven to 350 degrees and butter a 9x13 pan. Chop nuts and toss with a cinnamon and set aside. Place 8 sheets of phyllo dough in pan & butter each thoroughly. Sprinkle 2-3 tbsp of nut mixture on top. Top with 2 sheets of dough, butter, nuts, layering as you go. The top layer should be about 6-8 sheets deep. Cut square shapes & bake for 50 min. until gold and crisp. To make the sauce: boil sugar & water until sugar is melted, add vanilla & honey, simmer for 20 min.

Have you heard the news? It’s international Talk Like A Pirate Day! Arrrrrr you
ready to celebrate?

First,
you’ll need a little background about how this holiday started—Two men, Mark
Summers (Captain Slappy) and John Baur (Old Chumbucket), were playing
racquetball one day when Summers was hit with the ball. He let out a loud
“Arrrrrr!” and the idea for Talk Like a Pirate Day was born! The two sent in
their idea to a humor columnist. The columnist loved the idea, and the rest is
history.

Now, every
September 19, people around the world will honor the peg-leg folks and talk
like pirates! Some even use the day to have a pirate themed party. Aside from
having eye-patches, bandanas and fake parrots—these types of parties will be in
need of tasty food.

Grecian

recipe gives a little twist to original pizza—because we know that every pirate

good reason too! We’ve all heard that breakfast is the most important meal of
the day, but we seldom have the time to sit down and eat a full meal in the
morning. National Breakfast Month is trying to change this by raising the
awareness of the importance of the meal, as well as celebrating the meal
itself.

To celebrate the exciting holiday, we suggest that you and
your family schedule a few days throughout the month where you have a big
blowout breakfast. We at Grecian Delight love developing breakfast recipes, and
we have 2 to share with you for your breakfast celebration:

Excite your Taste Buds with a Lavash Club Sandwich Recipe

Mmmm….. sandwiches. What’s not to love
about them? They are versatile, quick, and practical. And with the endless possibilities
sandwiches offer, we could eat them just about every day. As a matter of fact, a Texas A&M study
conducted in honor of sandwich month revealed that U.S. citizens eat on average
200 sandwiches a year. With picnics and frivolity in play, August is the
perfect time to celebrate national sandwich month.

People have been enjoying the sandwich
for centuries, but it wasn’t until 1776 that it was referred to by this name.
The meal acquired its title from John Montague, the fourth Earl of Sandwich. It
just so happens that the Earl was a very heavy gambler who spent hours upon
hours at the card table. He was so addicted to gambling that he refused to
leave the game, even at meal times. It was then that he discovered if he put
meat and cheese between two slices of bread, he could eat with one hand and
continue to play with the other. Fellow gamblers followed suit and asked for
the “sandwich”.

We’d wager a bet that all this talk of sandwiches has got your stomach begging
for one. Truly, there is no better way to celebrate national sandwich month than
enjoying this delectable Lavash Club sandwich recipe.

hour gridlocked traffic. There was no time for lunch today and your stomach is
voicing its protests at being empty for so long. The thought of arriving home
and sitting down to one of your favorite meals causes a smile to flicker at the
corners of your mouth. It is National Lasagna Day, July 29, and you are having Greek
Pastichio lasagna at a friend’s house to celebrate the holiday. It does not
always have to be about the Italian version of lasagna.

Entering the door to your friend’s home, you are immediately

mouth waters in eager anticipation. Tonight you will savor the flavors of
Greece.

foods or celebrate National Lasagna Day with a big piece of Pastichio.

Tracking down the origins of lasagna, first century B.C., is
much easier than finding the origins of National Lasagna Day. It has not been
proclaimed a national holiday by the federal government. It just seems to have
popped into national pop culture. Most references to a National Lasagna Day
refer to the Italian based lasagna.

buds on a culinary trip to the Mediterranean. Celebrate National Lasagna Day
with a delicious slice of Greek Pastichio!

Celebrate by planning a special dinner for the occasion with family and friends. If the special father in your life has a touch of Greek blood or appreciates Greek food and cooking, this would be the perfect time to prepare a tasty treat for him and Grecian Delight is happy to help with some ideas for delicious Greek treats.

What would a special Greek menu be without a starter of hummus and pita? Grecian Delight makes a tasty hummus that is fantastic on light and fluffy pita. To mix up the flavors, try adding Opaa! Zesty Feta Spread and Opaa! Sun-Dried Tomato Feta Spread for a party platter.

For the main course of your Father’s Day feast, try our Opaa! Brand Precooked Gyros Slices to make the most delicious gyros your father has ever tasted. Simply heat the slices on a flattop grill and layer inside our fresh pita bread with Opaa! Tzatziki Sauce and fresh, sliced tomatoes and onions. Serve with French fries sprinkled with feta cheese and oregano to add some more Greek flavor to the meal. To make it even easier, pick up an Opaa! Gyros Family Pack Pocket Kit and have a special family dinner.

Or, consider trying a Spanokopita or Tyropita. Both varieties of savory Greek pies will have mouths watering and people clamoring to dive in. Other great main course options are Mousaka and Pastichio.

Serve a salad with the meal, tossed with sundried tomatoes, Kalamata olives, sliced cucumbers, crumbled feta cheese and drizzled with a little extra Tzatziki sauce. For a special dessert, treat Dad to a sweet, gooey, delectable piece of Baklava. The crispy Fillo dough shell blends perfectly with the chewy, delicious interior for a treat that nobody will forget soon.

Be sure to match a nice wine with the meal, perhaps a nice Greek red or white. Altogether, your Greek Fathers Day feast will be a surprise that Dad isn't soon to forget anytime soon, and neither will any of your guests. Don't be surprised if they start clamoring for your recipes!
With today’s emphasis on health, fitness, and wellness it only makes sense to consider all the advantages that hummus has to offer. We hear from people all the time that they are starting to replace their favorite dips and spreads with hummus dip which makes the dish much healthier. Grecian Delight Hummus Dip has one-third of the calories that mayonnaise has and a fraction of the fat.

Our traditional hummus spreads uses no canned chickpeas and it’s blended with only the finest imported Tahini. It’s an authentic recipe that can be combined with other ingredients to make a variety of flavors, such as Roasted Red Pepper, Mediterranean Olive, and Roasted Garlic. It has no preservatives, no trans fats, no cholesterol or hydrogenated oils, and it’s a great source of protein.

Hummus spreads are a great addition to a lot of different snacks and meals. Instead of Ranch Dressing, which is really bad for your body, you can instead dip your vegetables in hummus! This provides a unique taste that is sure to be a hit at your next party, and you can inform your friends that they are eating extremely healthy food.

Try hummus spreads on your sandwich, as a side for an entree, or even on a pizza! There really isn’t anything that Hummus doesn’t go with, so try it today!

Try our Hummus Salad Pita Wrap recipe:

Ingredients:

1 Tomato Pepper Pita Wrap (461)

3 oz. Traditional Hummus (4340)

2 oz. Red Peppers

½ oz. Calamata Olives (403)

3 oz. Romaine Lettuce

1½ oz. Greek Dressing

1 oz. Feta Cheese Crumbles (117)

Preparation Instructions:

1. Shred lettuce approximately ½ to ¾ inch thick. Slice tomato and Kalamata olives approximately 1/8 inch thick.

2. Mix lettuce and dressing in a separate bowl.

Tip: Prepare only enough product for one day’s service

Assembly

3. Thaw pita wrap (thaw enough for day’s usage) in bags out of box at room temperature at least 3 hours prior to use. Do not refrigerate bread.

4. Preheat grill to 350 degrees. Place thawed pita on grill. Heat approximately 10 seconds on each side.

5. Place warmed pita with bumpy side down on sandwich paper.

6. Spread hummus on to the warmed pita wrap

7. Place red peppers and olives on top of the hummus.

8. Place lettuce/dressing mixture on top of peppers.

9. Top with feta cheese crumbles.

10. Gently roll pita from end to end. Halfway through rolling the pita, fold in the excess paper from the ends of the sandwich. Roll the remainder of the sandwich. Cut sandwich in half on a bias; display open ends for service to customers.

Wrapping Tip:

1. Center ingredients in pita, 1-½ inches from either side, to ensure proper rolling.

2. Lay all ingredients from right to left and roll the sandwich away from you.

3. Sandwich maybe held cold, tightly wrapped in its original sandwich wrapper, for up to 30 minutes. If no dressing is added the sandwich can hold up to 3 hours under refrigeration.
