to Make the Best Tasting Gyros Sandwich!
Step
1... the Autodoner®
-Turn up heat on Autodoner® machine and cook cone until golden brown.
-For best results keep the cone 3-4 inches away from burners.
TIP: For slow periods turn heat down to cook the cone slower.
-You can hold cooked gyros cone meat in a steamtable pan add about 1/4"
of water to pan to maintain moisture and reheat product on flat top
grill.
Step
2... the pita
-Lightly oil one side of the pita bread with vegetable or corn oil.
-Place on a heated (350°-375°) flat top grill, cook pita bread
on both sides for 20-30 seconds per side to a light brown color. TIP:
Do not use any flavored oils or gyros cone drippings on the pita bread.

3... the Gyros meat
-With sharp knife using long cutting motion shave meat from Gyros cone,
slices should not be thicker than 1/16 of an inch. TIP: Do not cut cone
if meat is pink or light brown, let the gyros cone cook to a golden brown.
-You must keep sharpening your knife to avoid tearing the meat from the
cone.
-You can use an electric knife (i.e. Wizard) to shave the meat from the
gyros cone.
Step
4... the warmed pita
-Take pita bread from grill and place pita bread with bumpy side up on
sandwich paper.
TIP: For best-looking gyros sandwiches always serve gyros with smooth
side on the outside of the sandwich.
Step
5... the onions
-Place thinly sliced onions on the Warm Pita Bread
TIP: Onions should be sliced approximately 1/16" thick to allow onions
to cook between hot bread and meat.
Step
6... the Gyros slices
-Take the Gyros meat slices you cut from the cone and place on the warm
pita bread.
TIP: If gyros meat is cold you can reheat sliced gyros meat on a flat
top grill. Do not add any oil to reheated gyros meat.
Step
7... the finish
-Top gyro first with chilled Tzatziki sauce.
-Finish sandwich by topping with thinly sliced tomato halves.
TIP: Tomatoes should be cut into halves and sliced approximately 1/4"
thick.
-Tzatziki sauce should be kept refrigerated and served cold to avoid any
separating of the sauce.
Step
8... the serving
-Wrap sandwich and serve.
-Sandwich should be served hot to the customer.
