line of flatbreads that harkens back to the original artisans of the
Mediterranean. From our Mediterranean roots, our baking experience has
taken us from pita bread to other flatbreads such as Naan, Lavash and
Focaccia. We infuse our baking expertise with multiple flavors and
shapes to create flatbreads that are on target with consumer demand.
History and Use of Mediterranean Flatbreads
Traditional, ethnic
lavash is a thin
cracker-like bread that is rolled flat. When fresh, it is flexible like a
tortilla and is often used to make wrap sandwiches, "hi-rollers" and as
a base for brick oven pizzas.
Naan is the main bread consumed in
India and resembles pita bread. It is usually served hot brushed with
ghee or butter. Naan is also used to "scoop" food, serve stuffed with a
filling or covered with toppings such as meat, vegetables or cheese.
Popular in Italy,
focaccia can be
seasoned with olive oil and herbs, topped with onion, cheese and meat or
flavored with vegetables. Focaccia can be used as a side to many meals,
as a base for pizza or as sandwich bread.
The most common flatbread available,
pita
originated in the Middle East and is one of the oldest flatbreads
known. These soft, thin, versatile breads provide the basis for a
variety of on-the-go, popular items like filled pocket & wrap
sandwiches or pizza.
